GRANDMA’S POTATO SALAD
5 lbs. white potatoes, scrubbed, boiled, drained and diced
1 bunch scallions, washed, trimmed and chopped
8 stalks celery, chopped
6 hardboiled eggs, peeled and diced
2 small dill pickles, chopped
Dressing:
1 cup Miracle Whip, or mayonnaise (see Note*)
1 tablespoon dill pickle juice
1 teaspoon yellow mustard
1 teaspoon Season-All or salt
1/2 teaspoon ground pepper
2 tablespoons vegetable oil (optional — see Note*)
1 tablespoon wine vinegar (optional — see Note*)
Paprika, for garnish
Toss first five ingredients together. Combine dressing ingredients. Pour over potato mixture. Toss gently to combine.
(*NOTE: If you are not using Miracle Whip, you may have to season the mayonnaise with some vegetable oil and wine vinegar. First taste your dressing carefully! Then add the additional seasonings as needed.)
Refrigerate for several hours before serving.
Makes 12-16 servings.
